I find seed germination is easier when done using a bit of hydroponic perlite than the wet tissue method. Less messy. Pre-mix the water with soluble plant food powder will give better results. These pok choy seedlings will be transported to pots outdoor when they are bigger.

Growing more Pok Choy in DIY greenhouse
For combating aphids, I am keeping the baby Pok Choy inside a big clear plastic container. I don't fully cover them, if I do they'll burn. I tape a big black plastic bag on top of the plastic container to avoid overheating the veggie.

How to harvest Pok Choy
Baby Pok Choy leaves are best suited to go with soup noodle.
There is no need to wait for the vegetable to grow bigger, you can cut them anytime you want to eat them.

So... what can you do with a transparent swiss roll cake container? why of course...germinating seeds. Photo of Pok Choy seeds germinated after mere 2 days inside this clear container.
Harvest time: 8 weeks.
Seed pack: 1250 seeds, $2.78
